For these vegan tofu recipes I suggest buying super firm vacuum-packed tofu which doesn't require pressing. I recommend store brands like Trader Joe's and Sprouts Farmers Market, Nasoya, and Wildwood Organic. You can use extra-firm tofu instead, but you'll need to press it first to remove the excess water.
