Instructions
- In a large pot, saute the onion in olive oil until soft and slightly translucent.
- Add the garlic, carrots, and celery and saute a few more minutes until soft.
- Add the Italian seasoning and vegetable broth and bring to a boil. Add the white beans and simmer, stirring occasionally, until the beans are heated through.
- Taste and add salt and pepper, as needed. Remove the pot from the heat and stir in the parsley and lemon juice. Serve the Mediterranean White Bean Soup with lemon wedges, if desired.

- 1 Tablespoon olive oil, (optional)
- ½ cup onions, diced
- 3 cloves garlic, minced
- ½ cup carrots, diced
- ½ cup celery, diced
- 2 teaspoons Italian seasoning
- 4 cups vegetable broth
- 2-15 ounce cans white beans, (cannellini, great northern beans, or navy beans) rinsed and drained (3 cups)
- salt and pepper, to taste
- 2 Tablespoons fresh parsley, chopped
- 2 Tablespoons lemon juice
- lemon wedges, for serving (optional)
Instructions
- In a large pot over medium heat, saute the onion in the olive oil or a splash of water until soft and slightly translucent.
- Add the garlic, carrots, and celery and saute until soft.
- Add the Italian seasoning and vegetable broth. Once it has come to a boil, add the white beans. Allow to simmer, stirring occasionally, until the beans are heated through.
- Taste and add salt and pepper, as needed, then remove the soup from the heat and stir in the parsley and lemon juice. Serve with lemon wedges, if desired.
