Why you'll love this recipe
- You can make it with only 4 ingredients.
- It doesn't require any cooking, only marinating.
- You can add the tofu feta cubes to salads or enjoy them as a protein-rich snack.
Ingredients
Extra-firm tofu: Do not use shelf-stable silken tofu for this recipe. Look for refrigerated extra-firm tofu packed in water, which you will need to drain and press.
However, if available, I recommend using super-firm tofu that is vacuum-packed and already pressed. My favorites are Hodo Organic Tofu and Trader Joe's (which I suspect may be relabeled Wildwood Organic) High Protein Super Firm Tofu. I use them the most in my vegan tofu recipes.
Coconut vinegar: Made from the sap of coconut blossoms, it doesn't actually taste like coconut. It's mild and less acidic than apple cider vinegar.
Coconut vinegar is a key ingredient for making tofu feta and should not be substituted.
Brands to look for include Coconut Secret, Dynamic Health, and Silver Swan.

Coconut vinegar is not available. Any suggestions?
Amy Katz says
Normally I would offer substitutions, but in this particular case, coconut vinegar is necessary to make the tofu feta. You can buy coconut vinegar online from Amazon and iHerb.

I've made tofu feta a few times now and I found the key ingredients to get that cheese umami flavor are white miso and a little bit of nooch. I've never tried coconut vinegar, but have made it with white vinegar and it turns out just fine. Fresh herbs like Dill really kick it up if you have them on hand but aren't necessary.

Thanks for the suggestions, Alan!

So excited to try, Said the new vegan…. Coconut vinegar? Why? Any sub?
Amy Katz says
Hi Bernadette! Great question. This is a rare occasion where I don't think there is a good substitute. The coconut vinegar gives the tofu the most feta-like flavor (and doesn't taste at all like coconut). I hope you give it a try. Coconut vinegar is also delicious as an oil-free salad dressing, and you can also use it to make your own stir-fry sauce.
