If you love avocado toast, this cherry tomato avocado toast is an easy way to change it up. With toasted sourdough, lemony smashed avocado, and sweet cherry tomatoes, it’s fresh, fast, and full of flavor.
I remember when avocado toast first popped up on cafe menus. I couldn’t get enough of it. But once I started making it at home, I realized how easy and affordable it is to customize my own version.

Ingredients
Sourdough bread: I recommend vegan gluten-free sourdough from Bread SRSLY in San Francisco. You can order it online, slice it, and store it in your freezer for months.
Even those who aren't gluten-free love this bread, and it's the star ingredient in my panzanella tomato bread salad and Mediterranean sourdough stuffing.

Instructions
- While the bread is toasting, slice open the avocado lengthwise and remove the pit. Scoop out the flesh with a spoon and place in a small mixing bowl.
- Add a squeeze of lemon and sprinkle of salt, then coarsely mash the avocado with a fork.
- Use the fork to spread the avocado mixture on the slices of toast.
- Top with halved cherry or grape tomatoes and any additional toppings you like.
Serving suggestions
Pretend you’re at your favorite cafe and enjoy your tomato avocado toast with a beverage like a a cappuccino, a layered iced strawberry matcha latte or simple oat milk matcha latte. Or try one of these delicious variations:
- Caprese-style: Add fresh basil leaves, vegan mozzarella-style cheese, and balsamic vinegar or glaze.
- Greek-style: Top with fresh or dried oregano and sliced Kalamata olives.

Easy Cherry Tomato Avocado Toast (Ready in 5 Minutes)
Ingredients
- 2 slices sourdough bread, (gluten-free, if needed) or substitute whole grain bread
- 1 avocado, ripe
- 1-2 squeezes fresh lemon, (to taste)
- salt, to taste
- 8 cherry tomatoes, (or grape tomatoes) halved
Instructions
- Toast the bread in a toaster oven, oven, or on a grill pan or skillet on the stove until desired level of toastiness.2 slices sourdough bread
- Meanwhile, slice open the avocado lengthwise and remove the pit. Scoop out the flesh with a spoon and place in a small mixing bowl. (Discard the pit and skin.)1 avocado
