Air fryer shishito peppers have blistered skins and lightly charred spots with only a few spritzes of oil. They cook in about 5 minutes, making them an easy appetizer, snack, or side dish.
I first tried shishito peppers at an izakaya restaurant and later started making them at home in a cast iron skillet. But once I tried the air fryer, it became my favorite method because the peppers blister quickly without needing much oil.
Serve them simply with flaky salt, or add a squeeze of lemon or lime, furikake, or a quick lime and tamari dipping sauce.

[T]his recipe makes the old way of doing these little peppers obsolete. … This is a few spritzes of [olive oil spray] and they come out JUST AS GOOD. I will never do them another way.
- Lauren
Ingredients
- Shishito peppers: There's no need to remove the stems. They make convenient handles when you're eating the cooked peppers. Shishitos are generally mild, although occasionally you'll encounter one with a little kick.
- Cooking spray: I use just enough to lightly coat the peppers.
- Salt: Flaky salt is especially nice for finishing the blistered peppers, but any salt you have will work.
For serving, you can also use fresh lemon or lime, tamari, or furikake. If using furikake, check the ingredients since some varieties contain fish or other non-vegan ingredients.
Please see the recipe card for the complete ingredients, measurements, and instructions.
How to make air fryer shishito peppers

- Place the shishito peppers in the air fryer basket or tray in a single layer.
- Lightly spritz them with cooking spray and shake the basket to coat.
- Air fry for 5 to 6 minutes, shaking halfway through, until the peppers are blistered and lightly charred in spots.
- Transfer to a serving dish, sprinkle generously with salt, and enjoy right away.
Serving suggestions

Shishito peppers are best served right away while they're still warm. Pick one up by the stem and eat the whole pepper, seeds and all, then discard the stem.
They're delicious with nothing more than flaky salt. Or squeeze some fresh lemon or lime juice over them before serving.
For a simple dipping sauce, combine 1 tablespoon fresh lime juice with 1 teaspoon tamari. You can also sprinkle the peppers with vegan furikake for extra savory flavor.
For another quick vegetable you can make in your air fryer, try my air fryer green beans with garlic and lemon.

This is my first ever food review because this recipe makes the old way of doing these little peppers obsolete. This is 1,000x easier and healthier. I have always loved shishito peppers, but felt a little guilty using 2-3 tablespoons of oil to char them in. This is a few spritzes of PAM Olive Oil spray and they come out JUST AS GOOD. I will never do them another way. Thank you!

I am so happy you enjoyed the recipe, Lauren! I only make shishito peppers in my air fryer now, too.

I love Shishito peppers, I grow them and still buy them. This is the best way to cook them, thank you for the idea!! This is so easy and so tasty, you give nothing up fixing them in the air fryer versus a pan or the grill. Easy, fast = GREAT!! Thanks too for the tips for finishing an eating, bought some vegan Yuzu Furikake to try on them!! Yummy!!

Why didn’t I ever think of air frying shishitos before? It’s so easy this way. You don’t have to worry about them burning. I used some flake salt from Portland. So yummy.

I'm so glad you enjoyed them, Leslie!
