Vegan onion gravy is easy to make from scratch in about 30 minutes with only six ingredients: onions, olive oil, vegetable broth, tamari, dried thyme, and cornstarch, plus salt and pepper. Try it on mashed potatoes, roasted vegetables, and your favorite comfort foods.
For my family, it simply isn't Thanksgiving without creamy vegan olive oil mashed potatoes and plant-based gravy.
Inspired by my recipe for vegan mushroom gravy, this version is loaded with savory flavor while requiring minimal time and ingredients. You can also make it in advance and reheat it so holiday prep is less stressful.

Ingredients

Onions: While I typically use yellow, you can use also use white or red.

How to make vegan onion gravy

- In a small bowl or measuring cup, whisk together the vegetable broth, tamari, and cornstarch. Set aside while the onions cook.
- Saute the onions in olive oil over low heat until very tender and lightly golden.
- Stir in the thyme.
- Whisk the broth mixture again, then slowly add it to the onions. Cook, stirring often, until the gravy thickens. Taste and season with salt and pepper. Serve right away or refrigerate or freeze for later.
Serving suggestions

If you prefer a smoother gravy without onion pieces, blend part or all of it with an immersion blender, or carefully transfer it to a regular blender and blend until smooth.

Vegan Onion Gravy (30 Minutes, 6 Ingredients)
Ingredients
- 2 cups vegetable broth
- 1 Tablespoon tamari
- 2 Tablespoons cornstarch, or arrowroot powder
- 2 Tablespoons extra virgin olive oil
- 2 cups yellow onions, finely chopped
- 1 teaspoon dried thyme
- salt and pepper, to taste
Instructions
- Add the tamari and cornstarch to the vegetable broth and stir to combine. Set aside.2 cups vegetable broth, 1 Tablespoon tamari, 2 Tablespoons cornstarch
- Heat the olive oil over low heat. Add the onions and cook, stirring often, until very tender, about 10 to 15 minutes.2 Tablespoons extra virgin olive oil, 2 cups yellow onions

- Give the vegetable broth mixture a good stir and slowly add it to the onions. Stir often until the gravy has thickened to your desired consistency. Add salt and pepper, to taste, and serve.salt and pepper
