Made with fresh pomegranate arils, this vibrant pomegranate salad dressing strikes the perfect balance between sweet and tart. It comes together in minutes in a blender with just 5 ingredients, plus a pinch of salt and pepper.
When pomegranates are in season in fall and winter, I love adding the juicy seeds (also called arils) to dishes like kale salad with pomegranate and pomegranate quinoa salad.
But to really highlight their unique flavor, try turning them into this colorful vinaigrette.
Unlike many pomegranate dressings that rely on bottled juice, honey, or pomegranate molasses, this one uses the whole seeds for a fresh, bold taste. Blended with olive oil, red wine vinegar, pure maple syrup, and a touch of Dijon mustard for creaminess, this salad dressing is both naturally vegan and easy to customize to your taste.

Ingredients
- Pomegranate seeds (arils): I won't fault you for buying a container to save time and mess. But for the best flavor, I prefer seeding them myself from a whole fruit.
- Olive oil
- Red wine vinegar
- Pure maple syrup
- Dijon mustard
- Salt and pepper, to taste

How to make pomegranate vinaigrette
- Place the ingredients in the container of a high-speed blender. If you prefer a more tart dressing, start with half the maple syrup, then taste and add more as desired.
- Blend until completely smooth. Use right away, or refrigerate in an airtight container for later.
Serving suggestions
This pomegranate dressing pairs beautifully with a variety of dishes:
- Drizzle it over spinach salad with oranges and pumpkin seeds
- Toss it with lentils and cucumbers in this pomegranate lentil salad

Ingredients
- ⅓ cup pomegranate arils
- ¼ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 2 Tablespoons pure maple syrup
- 1 teaspoon Dijon mustard
- salt and pepper, to taste
Instructions
