The cubes cook in about 20 minutes with just a tablespoon of olive oil. And if you want to skip peeling and chopping a whole squash, packaged pre-cut butternut squash works perfectly here.

Ingredients

- Butternut squash: You'll need 4 cups of peeled squash cut into approximately 1-inch cubes. For a shortcut, use packaged peeled and pre-cut squash.
- Garlic, ginger, and cinnamon: This combination gives the squash a warm, lightly savory flavor. The small amount of cinnamon enhances the natural sweetness of the squash without making the finished dish sweet.

How to make air fryer butternut squash

- Prep the squash: Peel and cut the butternut squash into approximately 1-inch cubes, or use packaged pre-cut squash.
- Season: Toss the squash with olive oil, garlic powder, ginger, cinnamon, salt, and pepper until evenly coated.
- Air fry: Transfer the squash to the air fryer basket or tray and cook for about 10 minutes.
- Toss and finish: Shake or toss the squash, then cook for about 10 more minutes, until fork tender and lightly browned.

Air fryers can cook differently, so start checking the squash toward the end and adjust the cooking time as needed.
Serving suggestions

Serve the squash as a simple fall side dish, or use it anywhere you would normally use oven-roasted butternut squash.

Air Fryer Butternut Squash
Ingredients
- 4 cups butternut squash, peeled and cut into 1-inch cubes
- 1 Tablespoon extra virgin olive oil
- ½ teaspoon garlic powder
- ¼ teaspoon ground ginger

- salt and pepper, to taste
- fresh cilantro or parsley, chopped, for garnish (optional)
Instructions
- Place the butternut squash cubes in a large bowl.
