Place the butternut squash cubes in a large bowl. Add the olive oil, garlic powder, ginger, cinnamon, salt, and pepper, and toss until evenly coated.
4 cups butternut squash, 1 Tablespoon extra virgin olive oil, ½ teaspoon garlic powder, ¼ teaspoon ground ginger, ¼ teaspoon ground cinnamon, salt and pepper
Transfer the squash to the air fryer basket or tray. Air fry at 390°F for 10 minutes.
Shake the basket or toss the cubes, then air fry for about 10 more minutes, until the squash is fork tender and lightly browned.
Transfer to a serving bowl and garnish with fresh cilantro or parsley, if desired.
