Combine all the ingredients in a bowl and toss well.
2 cups tomatoes, 1 cup green bell peppers, 1 cup green olives, ¼ cup fresh parsley, 1 Tablespoon extra virgin olive oil, 1 Tablespoon red wine vinegar, salt and pepper
Enjoy right away or cover and refrigerate until ready to serve.

Leftover salad can be refrigerated in an airtight container for up to 3 days.
