Vegan Iced Strawberry Matcha Latte

matcha powder

boiling water
(approximately 175°F/80°C)

strawberries
roughly chopped

Tablespoon
pure maple syrup
(Use 2 Tablespoons if you prefer a sweeter drink.)
½ to 1
cup
crushed ice
(or ice cubes)
½
cup
unsweetened plant milk
(I recommend organic soy or oat milk, but almond, coconut, or your favorite non-dairy milk can be used.)

Instructions
Prepare the matcha by whisking together the matcha powder and boiling water until no lumps remain. Set aside.
1 teaspoon matcha powder,
¼ cup boiling water
Add the strawberries and pure maple syrup to a blender. Blend until a puree is formed. It does not have to be perfectly smooth.
½ cup strawberries,
1 Tablespoon pure maple syrup
Place the puree in the bottom of a tall glass and top with ice.
Pour the plant milk over the ice.
½ to 1 cup crushed ice,
½ cup unsweetened plant milk
Give the prepared matcha a quick stir and pour it over the milk. Enjoy immediately.
Notes
For an extra caffeine boost, use two teaspoons of matcha powder instead of one.
Try this recipe with your favorite fresh fruits such as blueberries, raspberries, mango, or pineapple. Or use a combination of two fruits.
For a fruit-sweetened version, substitute a Medjool date or two soaked in hot water in place of the pure maple syrup.
Or use your favorite liquid sweetener such as agave nectar, brown rice syrup, or monk fruit.
