Add the avocado, pure maple syrup, and cocoa powder to the bowl of a food processor. (Start with 2 tablespoons of maple syrup.)
2 ripe avocados*, 2-3 Tablespoons pure maple syrup, 2 Tablespoons cocoa powder
Process, scraping down the sides of the bowl as necessary, until the ingredients are completely combined. Taste and add more maple syrup, as needed, and blend again.
Transfer to small bowls or glasses and enjoy right away. Or refrigerate in an airtight container for later.
Notes
*Make sure to use avocados that are ripe or even overripe. I like to use ones that have been refrigerated so that the mousse is cold and ready to eat right away.Serving suggestion: Garnish the mousse with fresh fruit such as berries and sprigs of mint.Storing: This dessert is best enjoyed the same day but will keep for up to 2 days refrigerated in an airtight container.
