Place the dressing ingredients in the container of a high-speed blender. Blend until completely smooth. Taste and adjust the seasonings, as desired.
⅓ cup pomegranate arils, ¼ cup extra virgin olive oil, ¼ cup red wine vinegar, 2 Tablespoons pure maple syrup, 1 teaspoon Dijon mustard, salt and pepper
Place the salad ingredients in a large bowl.
5 ounces baby spinach, 1 cup pomegranate arils, 2 oranges, ¼ cup pumpkin seeds
Drizzle your desired amount of dressing over the salad and toss well to combine. Enjoy immediately.
