It's easy to make a refreshing Pineapple Mojito at home with rum, lime, mint leaves, and homemade fresh pineapple simple syrup. This summery cocktail pairs well with all different cuisines and is a delicious taste of the tropics.

Simmer the 1 cup chopped pineapple, coconut sugar, and water over medium-low heat, stirring occasionally, for 30 minutes. Taste and add more coconut sugar to achieve your desired level of sweetness. (You can strain the pineapple out if you prefer, but I like to keep the fruit in the simple syrup.)
1 cup pineapple, 1 cup water, 2 Tablespoons coconut sugar
Allow to cool and refrigerate until ready to use.
To make a mojito:
In a tall glass, add the lime, pineapple chunks, and mint leaves. Using a cocktail muddler or the back of a wooden spoon, muddle a few times to release the flavors.
2 wedges lime, 2 chunks pineapple, 4 mint leaves
Add the pineapple simple syrup and rum and give the cocktail a stir.
1½ ounces pineapple simple syrup, 1½ ounces white rum
Add ice cubes to fill the glass.

Pineapple simple syrup can be prepared in advance and refrigerated in an airtight container for one week.
