Place the potato cubes in a large mixing bowl. Add the olive oil, garlic powder, smoked paprika, and salt. Toss until evenly coated.
1½ pounds russet potatoes, 1 Tablespoon extra virgin olive oil, ½ teaspoon garlic powder, ¼ teaspoon smoked paprika, ¼ teaspoon salt
Transfer the potatoes to the air fryer basket or tray. Air fry at 400°F for 10 minutes.
Add the diced onion and shake the basket or toss everything together on the tray.

Reduce the air fryer temperature to 350°F. Cook for another 10 to 15 minutes, until the potatoes are browned and crispy on the outside and tender inside. Serve immediately.
Notes
Air fryer models vary, so check the potatoes toward the end of the cooking time and adjust as needed.
Cut the potatoes into similar-sized cubes for even cooking.
If you're using a smaller basket and the potatoes are crowded, cook them in batches for better browning.
For a variation, add diced bell pepper along with the onion.
Refrigerate leftover home fries in an airtight container for up to 3 days. Reheat them in the air fryer until hot and crisp.
