Place the potato cubes in a large mixing bowl. Add the olive oil, garlic powder, smoked paprika, and salt. Toss well to ensure all the cubes are coated.

Add the cubes to the air fryer basket or tray and cook for 10 minutes at 400°F.
When the 10 minutes is up, add the onions to the potatoes and shake or toss to combine.

Return the basket or tray to the air fryer and cook for an additional 10 to 15 minutes at 350° until browned and crispy. Serve immediately.

Since air fryer models vary, keep your eye on the potatoes as they cook and don't be afraid to open the oven or basket to check for doneness.Leftover home fries can can covered and refrigerated for up to 3 days. Reheat them in your air fryer for maximum crispness. A microwave can also be used for reheating but will result in softer potatoes.
