This easy Grilled Zucchini Recipe is a summer favorite. Cooking summer squash on the barbecue grill gives it the perfect flavor and texture. And it's delicious on its own or in a variety of dishes from tacos to salads.

6 zucchini 2 Tablespoons olive oil salt and pepper to taste
Cut off and discard both ends of each zucchini.
Slice each squash lengthwise into 4 strips.
Using a basting brush, brush one side of each strip with olive oil, then sprinkle with a little salt and pepper.
Turn over the strips and repeat on the other side.
Heat an outdoor barbecue grill to medium-high, or heat an indoor grill pan on the stove over medium-high heat.
Grill the zucchini strips for 8 to 10 minutes, turning half way through, until dark grill marks appear.
Serve the grilled zucchini right away, or cover and refrigerate for future use in other recipes.
Grilled zucchini will last 3 days covered and refrigerated.
