Grilled Zucchini Recipe

This easy Grilled Zucchini Recipe is a summer favorite. Cooking summer squash on the barbecue grill gives it the perfect flavor and texture. And it's delicious on its own or in a variety of dishes from tacos to salads.

Ingredients

  • 6 zucchini
  • 2 Tablespoons olive oil
  • salt and pepper to taste

Instructions

  • Cut off and discard both ends of each zucchini.
  • Slice each squash lengthwise into 4 strips.
  • Using a basting brush, brush one side of each strip with olive oil, then sprinkle with a little salt and pepper.
  • Turn over the strips and repeat on the other side.
  • Heat an outdoor barbecue grill to medium-high, or heat an indoor grill pan on the stove over medium-high heat.
  • Grill the zucchini strips for 8 to 10 minutes, turning half way through, until dark grill marks appear.
  • Serve the grilled zucchini right away, or cover and refrigerate for future use in other recipes.

Notes

Grilled zucchini will last 3 days covered and refrigerated.
