Italian Chopped Salad (Vegan)

This vegan and gluten-free version of a classic Italian Chopped Salad is highly customizable. Besides the ingredients listed, feel free to add other vegetables such as cucumbers, bell peppers, red onions, or mushrooms. The dressing is also delicious with other green salads or pasta salads.

Ingredients

FOR THE DRESSING:

FOR THE SALAD:

  • Romaine lettuce chopped
  • Cherry or grape tomatoes quartered
  • Chickpeas garbanzo beans, rinsed and drained
  • Black olives sliced
  • Pepperoncini sliced

Instructions

  • Combine the ingredients for the salad dressing in a jar. Shake to mix.
  • Add your desired amount of salad ingredients to a bowl.
  • Just before serving, shake the salad dressing, the pour the desired amount over the salad. Enjoy!
