Drain the excess water from the bag of carrots. Pour the carrots into a large mixing bowl and pat dry with a kitchen towel.
Add the olive oil, salt, and pepper. Toss well with your hands to coat the carrots.
Place the carrots in the basket or tray of an air fryer.
Air fry at 350-360°F for 15 minutes, shaking or tossing halfway through, or until the carrots are fork tender.
Notes
Air fryer cooking times vary from model to model. The 15 minute cooking time is an approximation. It never hurts to check for doneness a few times while the carrots are cooking.Make this recipe your own by adding optional herbs and spices along with the salt and pepper like one or more of the following:
½ teaspoon garlic powder
½ teaspoon dried dill
½ ground sumac
¼ teaspoon ground cumin
½ teaspoon curry powder, garam masala, ras el hanout, or your favorite spice blend
1 tablespoon Dijon mustard
a few pinches of cinnamon or nutmeg
Leftover carrots will last covered and refrigerated for 3 to 4 days.
