This Vegan Mac and Cheese recipe is made without cashews and is just as creamy and comforting as the classic version. Made with veggies...No vegan cheese required!

You'll need pasta, yellow potatoes, carrots, nutritional yeast, olive oil, lemon, and seasonings.

Cook elbow macaroni or other small pasta according to the package directions. Gluten-free works great, too.

Meanwhile, simmer peeled potatoes and carrots until fork-tender.

Transfer the cooked veggies to a blender and add the rest of the sauce ingredients.

Blend until perfectly smooth and creamy. 

Pour the cheesy sauce over the cooked and drained noodles.

Stir well so that every piece of macaroni is coated with the vegan cheese sauce.
