Creamy Vegan Orzo Soup with Chickpeas

Here's what you'll need:
* olive oil * onion * garlic * carrots * celery * vegetable broth * bay leaf * lemon zest * lemon juice * chickpeas * orzo * raw cashews * water * salt and pepper
Saute the onion in olive oil until soft and slightly translucent.
Add the garlic, carrots, and celery, and saute a couple more minutes.
Add the vegetable broth, bay leaf, lemon zest, and lemon juice. Once the broth comes to a low boil, add in the canned garbanzo beans and orzo and cook.
Stir in the cashew cream. Season to taste with salt and pepper and enjoy.
Serve it as a starter or as a complete cozy and comforting meal.
