Vegan chili is anything but boring when it's loaded with 3 types of beans, fajita veggies, and meaty jackfruit.

Look for canned jackfruit packed in brine or water,  not in syrup.

Rinse and drain the jackfruit and use your fingers to tear it into shreds.

Saute the jackfruit with onion and garlic.

Then add seasoning, black beans, kidney beans, pinto beans, tomatoes, bell peppers and vegetable broth.

Simmer the chili until it's nice and thick and the vegetables are tender.

Serve the vegan chili with your favorite toppings like avocado and cilantro.

And don't forget the tortilla chips!
