You'll need: * Brown or white button mushrooms * Fresh garlic * Dried thyme * Salt and pepper * Tapioca flour (or cornstarch/arrowroot) * Water

Step 1: Slice the mushrooms.

Step 2: Saute them with garlic and the seasonings.

Step 3: Stir in a slur made from tapioca flour and water and simmer.

Tip: Don't walk away from the stove for too long. Keep stirring as the gravy thickens to your desired consistency.
