Mediterranean Sourdough Stuffing is full of flavor from olives and sun-dried tomatoes. A fresh take on traditional Thanksgiving stuffing that's easy to make.

It's made Mediterranean-style with olive oil instead of butter and is naturally vegan. Choose certified gluten-free sourdough bread to make it gluten-free.

First cube the loaf of fresh bread. 

Then bake it until dry and toasty. This eliminates the need for stale bread!

Next saute onion in olive oil until soft.

And add garlic and celery and saute. Then stir in thyme, sun-dried tomatoes, olives, and salt and pepper.

Toss the mixture with the bread cubes in a large mixing bowl.

Then transfer to a baking dish and pour the vegetable broth over the stuffing mixture. All the broth to be absorbed about 20 minutes, then bake until golden brown.
