Lightly seasoned and perfectly fluffy, Rice and Chickpeas is a delicious side or main dish. It's easy to make on the stove in 30 minutes.

First saute onions in olive oil in a large pot.

Then add red bell peppers and garlic.

Next add the rice and saute until it starts to turn translucent. 

Add water, bring to a simmer, and cover the pot while the rice cooks.

Add the canned chickpeas on top of the rice, but do not stir.

Cover the pot with a clean dish towel, place the lid on top, and allow the rice and chickpeas to steam.

Fluff the rice, stir in parsley, and season with salt and pepper. The rice will be the perfect texture!
