Quinoa is anything but boring when it's made with oranges, carrots, raisins, walnuts, cinnamon, and fresh herbs.

Saute shredded carrots in olive oil until soft.

Add quinoa and cinnamon and saute for another minute.

Add water and cook until it's absorbed.

The quinoa is ready when you see little rings separated from the grains.

Fold in raisins, walnuts, orange zest, orange juice, cilantro, and mint.

Enjoy it as a side or as a main dish with a salad or vegetables.
