Hearty and comforting, these easy vegan muffin pan meatloaves are perfect for both holidays and weeknight dinners.





butternut squash

Balsamic vinegar

Panko breadcrumbs

ground flaxseeds

Step 1: Combine ground flaxseeds with water to make a "flax egg".

Step 2: Saute onion, garlic, celery, and carrots.

Step 3: Combine the flax mixture, sauteed vegetables, lentils, breadcrumbs, and seasonings.

Step 4: Pack down the mixture in a muffin pan and brush the ketchup-balsamic glaze on top.

Step 5: Bake the vegan meatloaf muffins. Allow them to rest 5 to 10 minutes before removing them from the pan.

Serve them as a vegan entree at Thanksgiving, Christmas, or any night of the week.
