Greek Lentil Soup
Gather your ingredients
Saute the onion.
Add garlic, carrots, and celery and saute.
Stir in the lentils, vegetable broth, water, tomato paste, and bay leaf. Bring to a simmer, then reduce the heat.
Simmer until lentils are soft.
To serve, top each bowl with a drizzle of olive oil and red wine vinegar.
