Vegan Lemon Asparagus Pasta
Quickly cook the asparagus in a pot of boiling water.
Use tongs to transfer the asparagus to a bowl of ice water. Use the same pot of water to cook the pasta.
While the pasta is cooking, prepare the sauce by blending raw cashews, water, and lemon juice.
Toss the sauce with the cooked pasta and cut asparagus.
