A vegan cream cheese sandwich is an easy lunch you can make with your favorite ingredients such as sun-dried tomatoes and fresh spinach.
You can’t go wrong with the classic lunch combination of a sandwich and chips.
But you may wonder what to use as your filling when you want something healthier and don’t eat meat or dairy.
And there’s no reason to settle for greasy high-fat potato chips.
Besides Vegan Tuna Salad, I’ve always loved a good Vegan Cream Cheese Sandwich. And now that there are so many delicious non-dairy cream cheeses on the market, it’s easier than ever to enjoy this lunch.
Of course, you’ll want something to go with your sandwich, which is why I’m so excited to share Vegan Rob’s snacks with you!
Not literally though. You can get your own chips, puffs, and popcorn here.
Kids will love these snacks in their lunches, and you won’t feel bad about letting them have them since they are a much healthier alternative to typical chips. Some of my favorites include the Spinach & Matcha Kettle Chips, Probiotic Cauliflower Puffs, and Tumeric Chips.
Plus I’m a sucker for the Dairy-Free Cheddar Puffs.
But before we choose our side, let’s get back to the Vegan Cream Cheese Sandwich!
The great thing about these kind of lunches is you can customize them to your tastes.
First you can choose what kind of bread to use. I really like baguettes, so if I can find a gluten-free one that’s also vegan, that’s my preference. But you can use your favorite sliced bread, too.
Next come the fillings. For this recipe I used my favorite combination of sun-dried tomatoes and baby spinach.
Other favorites include roasted vegetables such as red bell pepper, eggplant, and zucchini, like a Roasted Ratatouille sandwich.
I also like olive tapenade and mixed greens.
As you probably guessed, all you need to do to make a Vegan Cream Cheese Sandwich is spread some cream cheese on bread and add your toppings.
The harder task is figuring out which snacks from Vegan Rob’s to pair with it!

Vegan Cream Cheese Sandwich
Choose your favorite bread and toppings to make this easy and delicious sandwich!
Spread a layer of vegan cream cheese on each slice of bread.
Add some drained sun-dried tomatoes and spinach leaves to one slice of the bread.
Place the second slice of bread on top and enjoy your sandwich!
I used a Schar Baguette (gluten-free) to make my sandwich.
