I'm always looking for new ways to add more colorful foods into my diet. As you've probably heard, it's important to "eat the rainbow" by focusing on colorful vegetables and fruits.
And while I have no trouble eating my fair share of most of the colors, purple seems like one color I often don't get enough of.
So with a bottle of Welch's 100% Grape Juice in hand, I decided to think of ways to incorporate it into recipes.
I figured, why only enjoy the juice from the Concord grape as a beverage? Although it is really delicious mixed with sparkling water, in a smoothie, or frozen as ice cubes. But why stop there? How about sauces and dressings?
And that's when it dawned on me.
Concord grapes make delicious jelly.
Jelly can be made from chia seeds.
Chia seeds are delicious in oatmeal.
I love oatmeal with peanut butter.
So let's make Peanut Butter & Jelly Overnight Oats!

You only need five ingredients for this delicious breakfast:
- Welch's 100% Grape Juice (Don't forget to grab your coupon!)
- Chia seeds
- Oats
- Non-dairy milk
- Peanut Butter

Peanut Butter & Jelly Overnight Oats
Ingredients
- 1 cup Welch's 100% Grape Juice
- ⅓ cup chia seeds
- 1 cup oats
- 1 cup non-dairy milk, I used unsweetened organic soy
- 4 Tbsp peanut butter
Instructions
- In a medium bowl, combine the grape juice and chia seeds. Stir well, then cover and refrigerate overnight.
- In another bowl, combine the oats, non-dairy milk, and peanut butter. Stir, cover, and refrigerate overnight.
- In the morning, give the contents of each bowl a good stir. Layer the grape chia jelly and peanut butter oats in a jar or serving bowl. Enjoy!

this looks PHENOMENAL! i'm gonna have to un-veganize it, though, because i don't have access to non-dairy milk much but we have glorious raw, grass-fed milk I pick up each week at a farm nearby from 4 of the happiest cows who hang out with the family there. I bet those happy cows would even enjoy the PB&J oatmeal if there are leftovers...

Sorry! I didn't realize this was a fully vegan recipe site. I came via a welch's link and posted before I checked out the other recipes... I thought it was vegetarian. I can't find a way to remove my post about the milk, so feel free to do so if you prefer. I try to eat local whenever I can, and soy & nut milks definitely are not something we can produce easily in northern new england... decent grazing & hay, and some great grains are totally possible. I didn't intend to offend. and now that i've looked at some of the other recipes I definitely hope to make some of them, too. Because no matter what eating more veggies is a good idea!

I love grape juice. I have to not buy it as when I do I end up drinking the whole carton far too quickly. Such a great idea to use it to make chai jam and you can't beat peanut butter and jelly or overnight oats!
