Mango Tofu Summer Rolls are a delicious warm-weather appetizer or meal. Even if you’re not an expert at rolling them (I’m certainly not!) you’re sure to enjoy the flavors of mint, cilantro, red bell pepper, mango, avocado, and savory baked tofu. And don’t forget the Spicy Peanut Sauce!
Before we go any further, let’s get one thing out of the way.
I am not very skilled at making rolls.
But you know what? It doesn’t matter!
Even if your summer rolls are messy, even if they fall apart when you eat them, they are still going to taste great.
How do I know this? From experience, of course!

Or if you really don’t want to make rolls, you can turn these summer rolls into a bowl by serving the ingredients over rice or lettuce, similar to a Spicy Sushi Bowl.
So don’t be intimidated to try your hand at making these Mango Tofu Summer Rolls. I promise that you will enjoy them, not matter what they look like.
One of my favorite parts about eating summer rolls (also known as fresh spring rolls) is the sauce. If you enjoy Peanut Butter Noodles, you are really going to like the Spicy Peanut Sauce.
Of course, you can substitute almond butter or SunButter if you’re allergic to peanuts.
I like to buy baked savory tofu from the supermarket when I make these rolls so that I don’t have to do any actual cooking. I know it’s not difficult to bake tofu, but I tend to make the rolls when I’m looking for a cold dish and don’t want the kitchen to get too hot from the oven. But you can certainly prepare your favorite tofu and use it in this recipe.
As mentioned earlier, I can make a meal out of just summer rolls. But you can also serve them with some other raw summer recipes during the warm months. Or try them as your main course along with some sesame asparagus or Tea Leaf Salad.

Mango Tofu Summer Rolls with Spicy Peanut Sauce
- 1 bunch mint leaves
- 1 bunch cilantro
- 1 red bell pepper, sliced
- 1 mango, peeled and sliced
- 1 avocado, sliced
- 6 ounces savory baked tofu, sliced
- Combine the ingredients for the Spicy Peanut Sauce in a bowl. Mix well and set aside.
- Dip one spring roll rice paper wrapper in a bowl of warm water until soft. Lay out on a board. Place the ingredients on the lower third of the wrapper. Fold over, then fold in the sides. Continue to roll until the rice paper ends. Slice in half, if desired.
- Repeat the process for each roll. Serve immediately with the Spicy Peanut Sauce.
