Or even if you do eat meat and cheese, this version is a great alternative when you want something a little healthier. And it’s great for Meatless Monday!
My favorite flavors in an Italian salad are the olives, the pepperoncini, and the tangy dressing. It’s similar to the Dijon Mustard Salad Dressing I make a lot, but this one contains Italian seasonings like basil and oregano.
You could also use this dressing in other green salads or for making a Salad in a Jar to take with you for lunch. It would even be perfect for making pasta salad!
I like making olive oil and vinegar based dressings in a jar. All you need to do is add the ingredients and shake the bottle to mix it up. Plus you can easily refrigerate the unused portion for later.

FOR THE DRESSING:
- Combine the ingredients for the salad dressing in a jar. Shake to mix.
- Add your desired amount of salad ingredients to a bowl.
- Just before serving, shake the salad dressing, the pour the desired amount over the salad. Enjoy!
