Italian Chopped Salad gets a makeover with this vegan and gluten-free version. It contains all of the flavor of the classic plus chickpeas for added protein. Enjoy Italian Chopped Salad with pizza or pasta.
If you’ve been craving a classic chopped salad, but don’t eat meat or cheese, this is the salad for you.
Or even if you do eat meat and cheese, this version is a great alternative when you want something a little healthier. And it’s great for Meatless Monday!
My favorite flavors in an Italian salad are the olives, the pepperoncini, and the tangy dressing. It’s similar to the Dijon Mustard Salad Dressing I make a lot, but this one contains Italian seasonings like basil and oregano.
You could also use this dressing in other green salads or for making a Salad in a Jar to take with you for lunch. It would even be perfect for making pasta salad!
I like making olive oil and vinegar based dressings in a jar. All you need to do is add the ingredients and shake the bottle to mix it up. Plus you can easily refrigerate the unused portion for later.
If you’re looking for a complete meal, try serving this Italian Chopped Salad with Antipasto Skewers and Avocado Basil Pesto Pasta. It’s also great with garlic bread. I like making mine with my favorite gluten-free sourdough from Bread SRSLY.
