When I start to see fresh cranberries in the market, I get really excited for the holidays. And I admit, I may go a little overboard buying bags of the ruby-red fruit. Fortunately, cranberries freeze wonderfully, so you can enjoy them all year long.
But after using fresh cranberries for Thanksgiving cranberry sauce, what do you do with the rest?
Make smoothies, of course!
I love the light pink color with little flecks of crimson. And this smoothie is really healthy.
Cranberries contain vitamins C, E, and K, plus copper and manganese. Pineapple contains vitamins C, B1 and B6, plus copper, manganese and folate. Bottom line, these two fruits together pack a punch! And moreover, they taste great together.
Cranberry Pineapple Smoothie
- 1 cup non-dairy milk, (I use unsweetened organic soy milk)
- 1 frozen banana
- 1 cup fresh or frozen cranberries
- 1 cup frozen pineapple
- pure maple syrup, to taste
- Add all the ingredients to a high speed blender, such as a Vitamix. Blend until smooth. Enjoy immediately.
