Mix up your morning routine with a delicious vegan and gluten-free Breakfast Yogurt Parfait! It’s easy and fast to make with only three ingredients.
Do you ever get in a breakfast rut?
I admit that most mornings I feel uninspired and reach for the same thing.
However, I’m usually short on time and reach for a bowl of cereal and head straight to work.
But recently I’ve found a new favorite.
And I would be perfectly happy eating it every day!
Have you heard of Vegan Rob’s?
They make some of my favorite snacks including chips and puffs which you may remember from my Vegan Cream Cheese Sandwich recipe.
And recently they came out with four varieties of their new Kombuchabar.
I use a Blueberry Kombuchabar to make my Breakfast Yogurt Parfait, but any of the flavors would be delicious in this recipe.
The bars are all vegan, gluten-free, and non-GMO.
The Blueberry one is made from organic ingredients such as quinoa, cashews, blueberries, pumpkin seeds, sunflower seeds, and kombucha.
I like using the bars in my parfaits instead of a typical store-bought granola because I feel better about the ingredients and nutrition.
Of course, the Kombuchabars are also delicious on their own as a quick snack between meals or after a workout.
They are perfect for taking on the go or keeping in your gym bag.
Making a vegan Yogurt Breakfast Parfait is easy and only requires three ingredients.
As you may have guessed, the first ingredient is vegan yogurt.
There are a wide variety of options available at most major supermarkets these days.
You can find ones made from cashews, almonds, soy, and/or coconut.
I enjoy using vanilla non-dairy yogurt in this recipe, but plain or or fruity flavors would work well, too.
Then all you need is your favorite Vegan Rob’s Kombuchabar and some fresh berries.
Any combination of raspberries, blueberries, blackberries, or sliced strawberries would be delicious with yogurt and Kombuchabar.
Now let’s make a Breakfast Yogurt Parfait!
Breakfast Yogurt Parfait (Vegan)
Mix up your morning routine with a delicious vegan and gluten-free Breakfast Yogurt Parfait! It's easy and fast to make with only three ingredients.
- 1 cup vanilla non-dairy yogurt (I used soy)
- 1 Vegan Rob's Kombuchabar chopped in small pieces (I used Blueberry)
- 1 cup mixed berries (I used raspberries and blackberries
In a cup or small bowl, add 1/2 cup of yogurt to the bottom.
Next add half of the chopped Kombuchabar.
Then add half of the berries.
Repeat with the remaining ingredients and enjoy immediately.
