Vegan Cauliflower Ceviche is easy to make in  less than 30 minutes with a handful of ingredients.

Cauliflower works well as a substitute for fish because it's mild in flavor and goes well with traditional ceviche ingredients like onion, chili pepper, and lime juice.

Ingredients: cauliflower, red onion, jalapeno pepper, tomatoes, lime juice, cilantro, and salt.

Cook the florets in a large pot of boiling water until fork tender.

Immediately transfer the florets to a bowl of ice water to stop the cooking.

Pat dry and chop into small pieces.

Combine all of the ingredients in a large mixing bowl and toss well.

Enjoy with tortilla chips, plantain chips, or fried tortillas.
