Instead of boiling, these sweet potatoes are first baked and then mashed with coconut milk and a dash of cinnamon.

Ingredients

Step 1: Bake the sweet potatoes until fork tender.

Step 2: Discard the skin and transfer the flesh to a medium pot to mash.

Step 3: Add coconut milk and continue to mash until smooth and creamy.

Step 4: Season to taste with cinnamon, salt, and pepper.

Serve them as a vegan side dish at Thanksgiving, Christmas, or any night of the week.
